Fabulously Filling Banana and Oatmeal Pancakes

In honor of those seeking healthier breakfast alternatives, I offer this hearty and healthy pancake recipe that is gluten-free, sugar-free, and very filling. Perfect for winter mornings but delicious all year round!

INGREDIENTS

*2 ripe bananas, mushed
*2 eggs, beaten
*1/2 cup of Bob's Red Mill Gluten-Free Quick Rolled Oats
*1/2 teaspoon of baking powder
*pinch of kosher salt
*maple syrup of choice
*fresh fruit of choice

INSTRUCTIONS

- Combine mushed bananas, eggs, oatmeal, baking powder and salt in a bowl and 'whisk' with a fork.  Allow the mixture to rest for 20 minutes, as this will activate the baking powder and thicken the mixture.

- Heat griddle to medium heat (add cooking spray as needed).  Pour 1/4 of the mixture (per pancake) onto the griddle.

- Cook for approximately 2-3 minutes, then flip and cook on the other side until set (about 2 minutes).

- Serve with maple syrup and fresh fruit on the side to complement.

Makes (4) Pancakes with (2) Pancakes per serving.
