Strawberries & Spinach Salad with Toasted Almonds, Feta Cheese & Poppy Seed Dressing

Nothing says 'Summertime' like a plump, sweet and delicious strawberry!

A little unknow spiritual fact: The garden strawberry (a hybrid species of the genus: Fragaria) is a berry that is attached to many positive attributes through Christian symbolism. For example, in Christian Art, the flowers and berries together symbolize righteousness and spiritual merit and the structure of the strawberry leaves (being tri-foliate) represents the trinity.

As a God-honored associated fruit, I feel it fitting to launch my first post for the summer with this 'righteous' recipe.  Out of the hundreds of recipes I have created or coveted over the years, this one is the simplest, the most impressive, and the most delicous of them all...Really!

The combination of spinach, strawberries and toasted almonds simultaneously provides a wide array of nutrients, vitamins and minerals your body needs and craves. Add in the homemade poppy seed dressing and goat/feta cheese and you (and your guests) will be tempted to lick that salad bowl clean. :)

INGREDIENTS

  • 3 Tablespoons of Honey
  • 3 Tablespoons of Mayonnaise
  • 2 Tablespoons of Milk
  • 1 Tablespoon of Poppy Seeds
  • 1 Tablespoon of White Wine Vinegar
  • 1 bag of Baby Spinach
  • 1 Cup of Fresh Ripe Strawberries
  • 2 Tablesopoons of Slivered Almonds, toasted
  • Crumbled goat cheese or feta cheese

INSTRUCTIONS

  1. To make the dressing - Combine the first 5 ingredients (honey, mayo, milk, poppy seeds and white wine vinegar) in a small bowl. Whisk together vigorously.
  2. Place baby spinach in a large bowl. Add strawberries and almonds, tossing to combine.
  3. Divide salad evenly amount 6 salad bowls or salad plates.
  4. Drizzle 1 to 2 tablespoons of homemade poppy seed dressing and crumbled goat cheese or feta cheese over each serving.
